Stuffed Salsa Peppers
( Serves 6 )
6 Large Green Peppers (You can use Red 0r Yellow)
5 Cups Boiling Water
1 Pound Ground Beef
1-1/2 Cups rice, cooked
1 Cup Papa Frank's Special Salsa
Heat Oven to 350 degrees
Clean out Pepper and wash inside and out. Cook peppers in boling Water about 5 minutes. Drain.
Cook Ground Beef until brown, then drain off fat. Stir in Papa Frank's Special Salsa and Rice.
Stuff Peppers with 1/2 cup meat mixture. Place peppers upright on ungreased baking dish. Pour remaining sauce over the peppers.
Cover and bake about 35-40 minutes, then uncover and bake another 10 minutes.
Garnish with Chedder Cheese if desired.
